Ingredients:
- 12 jalapeño peppers, halved and seeded
- 1 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 12 slices bacon, halved
Instructions:
- Preheat the oven to 400°F (200°C).
- Mix cream cheese and cheddar cheese in a bowl.
- Stuff each jalapeño half with the cheese mixture.
- Wrap each jalapeño with a half slice of bacon, securing it with a toothpick.
- Arrange on a baking sheet and bake for 20-25 minutes or until the bacon is crispy.
Jalapeño poppers can be unhealthy, but my lighter version uses reduced-fat cheddar and cream cheese to decrease the calorie count. Two stuffed poppers have only 111 calories and are low in carbs and high in protein.
