Ingredients:
- 1 large sweet potato, peeled and diced
- 1 can coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 cup spinach
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pan and sauté onions and garlic for 3-4 minutes.
- Add sweet potatoes, curry powder, and turmeric, and cook for 5 minutes.
- Pour in coconut milk and bring to a simmer.
- Cook for 15-20 minutes until sweet potatoes are tender.
- Stir in spinach and cook until wilted.
- Season with salt and pepper and serve over rice.
