Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 1 block firm tofu, crumbled
- 1 tsp turmeric
- 1 tsp paprika
- Salt and pepper to taste
- Fresh spinach, optional
Instructions:
- Heat olive oil in a skillet over medium heat. Add onion and bell pepper, and cook until softened.
- Add the crumbled tofu, turmeric, and paprika. Stir well to combine.
- Cook until the tofu is heated through and slightly browned. Season with salt and pepper.
- Stir in fresh spinach if using, and cook until wilted.
- Serve with toast or as a filling for breakfast burritos.
