Ingredients:
- 1 head cauliflower, grated (or 4 cups cauliflower rice)
- 2 tbsp sesame oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (e.g., peas, carrots)
- 2 eggs, beaten
- 3 tbsp soy sauce
- 2 green onions, chopped
Instructions:
- Heat sesame oil in a large skillet over medium heat. Add onion and garlic, and cook until softened.
- Add mixed vegetables and cook for a few minutes until tender.
- Push vegetables to the side and add the beaten eggs. Scramble until cooked.
- Add cauliflower rice and soy sauce. Stir well to combine and cook until cauliflower is tender.
- Garnish with chopped green onions and serve.
