Vegan Tofu Scramble

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 block firm tofu, crumbled
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh spinach, optional

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add onion and bell pepper, and cook until softened.
  2. Add the crumbled tofu, turmeric, and paprika. Stir well to combine.
  3. Cook until the tofu is heated through and slightly browned. Season with salt and pepper.
  4. Stir in fresh spinach if using, and cook until wilted.
  5. Serve with toast or as a filling for breakfast burritos.
