Ingredients:
- 200g rice noodles
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 block tofu, cubed
- 1 cup bean sprouts
- 1 carrot, julienned
- 3 tbsp soy sauce
- 2 tbsp peanut butter
- 1 tbsp lime juice
- Chopped peanuts, for garnish
- Fresh cilantro, for garnish
Instructions:
- Cook rice noodles according to package instructions. Drain and set aside.
- Heat sesame oil in a large skillet over medium heat. Add garlic and tofu, and cook until tofu is browned.
- Add bean sprouts and carrot, and cook for a few minutes.
- Mix soy sauce, peanut butter, and lime juice in a small bowl. Pour over the noodles and toss to coat.
- Garnish with chopped peanuts and fresh cilantro before serving.
