Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 500g mushrooms, sliced
- 1 tbsp flour
- 1 cup vegetable broth
- 1 cup plant-based milk
- 2 tbsp soy sauce
- 1 tsp Dijon mustard
- Fresh parsley, for garnish
Instructions:
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, and cook until softened.
- Add mushrooms and cook until they release their liquid and begin to brown.
- Sprinkle flour over the mushrooms and stir to combine.
- Gradually add vegetable broth and plant-based milk, stirring continuously.
- Add soy sauce and Dijon mustard, then let simmer until thickened.
- Serve over pasta or rice, garnished with fresh parsley.
