Ingredients:
- 1 cup Arborio rice
- 2 cups vegetable broth
- 1/2 cup mushrooms, sliced
- 1/4 cup Parmesan cheese
- 2 tbsp olive oil
- 1 small onion, chopped
Instructions:
- Heat olive oil in a pan and sauté onion and mushrooms until soft.
- Add Arborio rice and cook for 2 minutes.
- Gradually add vegetable broth, stirring constantly, until the rice is fully cooked.
- Stir in Parmesan cheese before serving.
