Caprese Sandwich

Ingredients:

  • 2 ciabatta rolls
  • 1 ball of fresh mozzarella, sliced
  • 1 large tomato, sliced
  • Fresh basil leaves
  • 2 tbsp balsamic glaze
  • 2 tbsp olive oil

Instructions:

  1. Slice the ciabatta rolls in half and drizzle with olive oil.
  2. Layer the mozzarella, tomato slices, and fresh basil leaves.
  3. Drizzle balsamic glaze on top, close the sandwich, and serve.

Mozzarella is packed with protein, too. Traditional caprese doesn’t have meat as a protein source, but the protein found in mozzarella will be enough to keep you feeling full and energized until your next meal.

Caprese salad is a healthy option! Low in calories with a bunch of important nutrients coming from the vegetables and healthy fats from the cheese and olive oil. Basil also is a strong anti-inflammatory with enzyme-inhibiting oils.
