Ingredients:
- 1 can chickpeas, drained and rinsed
- 2 tbsp vegan mayo
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp dill, chopped
- Salt and pepper to taste
- 4 slices whole-grain bread
- Lettuce, tomato, cucumber slices
Instructions:
- Mash chickpeas with a fork until chunky.
- Stir in vegan mayo, mustard, lemon juice, dill, salt, and pepper.
- Spread the chickpea mixture onto two slices of bread.
- Add lettuce, tomato, and cucumber, then top with remaining bread slices.
- Serve immediately.
