Ingredients:
- 1 1/2 cups almond flour
- 1/4 cup butter, melted
- 2 tbsp honey or maple syrup
- 1 1/2 cups ricotta cheese
- 1/2 cup Greek yogurt
- 1/4 cup honey
- 2 eggs
- Zest and juice of 1 lemon
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
- In a bowl, mix almond flour, melted butter, and honey. Press into the bottom of the prepared pan to form a crust.
- In another bowl, whisk together ricotta cheese, Greek yogurt, honey, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
- Pour the mixture over the crust and spread evenly.
- Bake for 30-35 minutes, or until set and lightly golden.
- Cool completely before slicing into bars. Refrigerate before serving.
