  • 1 1/2 cups almond flour
  • 1/4 cup butter, melted
  • 2 tbsp honey or maple syrup
  • 1 1/2 cups ricotta cheese
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 2 eggs
  • Zest and juice of 1 lemon
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. In a bowl, mix almond flour, melted butter, and honey. Press into the bottom of the prepared pan to form a crust.
  3. In another bowl, whisk together ricotta cheese, Greek yogurt, honey, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Pour the mixture over the crust and spread evenly.
  5. Bake for 30-35 minutes, or until set and lightly golden.
  6. Cool completely before slicing into bars. Refrigerate before serving.
