Ingredients:
- 1 lb beef sirloin, thinly sliced
- 2 tbsp coconut oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp ground ginger
- Sesame seeds, for garnish
Instructions:
- Heat coconut oil in a large skillet over medium-high heat. Add beef slices and cook until browned.
- Add bell pepper and zucchini, and cook until tender.
- In a small bowl, mix soy sauce, rice vinegar, sesame oil, and ground ginger.
- Pour sauce over beef and vegetables, and toss to coat.
- Cook for an additional 2-3 minutes. Garnish with sesame seeds and serve.
Stir-frying results in tender-crisp vegetables that retain more nutrients than if they were boiled. And since stir-frying generally requires only a small amount of oil, the fat content is relatively low.
