- 2 tbsp soy sauce (or tamari)
- 1 tbsp maple syrup
- 1 tbsp lime juice
- 2 garlic cloves, minced
- 1 cup shredded carrots
- 1 bell pepper, sliced
- 2 green onions, chopped
Instructions:
- Cook rice noodles according to package instructions.
- Mix peanut butter, soy sauce, maple syrup, lime juice, and garlic in a bowl.
- Toss noodles with sauce, carrots, bell pepper, and green onions.
