Vegan Thai Peanut Noodles

Ingredients:

  • 8 oz rice noodles
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce (or tamari)
  • 1 tbsp maple syrup
  • 1 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 cup shredded carrots
  • 1 bell pepper, sliced
  • 2 green onions, chopped

Instructions:

  1. Cook rice noodles according to package instructions.
  2. Mix peanut butter, soy sauce, maple syrup, lime juice, and garlic in a bowl.
  3. Toss noodles with sauce, carrots, bell pepper, and green onions.
