Ingredients:
- 4 bell peppers, tops cut off and seeds removed
- 1 cup quinoa, cooked
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions:
- Preheat oven to 375°F (190°C).
- Mix quinoa, black beans, corn, cumin, and chili powder in a bowl. Season with salt and pepper.
- Stuff the mixture into the bell peppers and place them in a baking dish.
- Cover with foil and bake for 30-35 minutes, or until peppers are tender.
- Garnish with fresh cilantro before serving.
