Ingredients:
- 1 cup Arborio rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 4 cups vegetable broth, warmed
- ¼ cup white wine
- 2 tbsp nutritional yeast
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pan and sauté onions and garlic for 3-4 minutes.
- Add mushrooms and cook for another 5 minutes.
- Stir in rice and cook for 1 minute.
- Add white wine and let it evaporate.
- Gradually add vegetable broth, one ladle at a time, stirring frequently until the rice absorbs the liquid.
- Stir in nutritional yeast and season with salt and pepper before serving.
