Ingredients:
- 1 cup dry lentils
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp oregano
- 1 tsp thyme
- Salt and pepper to taste
- Cooked pasta of choice (like spaghetti)
Instructions:
- Cook lentils according to package instructions.
- Heat olive oil in a skillet, then sauté onion and garlic.
- Stir in crushed tomatoes, tomato paste, oregano, thyme, salt, and pepper.
- Add cooked lentils and simmer for 15 minutes. Serve over pasta.
