Vegan Lentil Bolognese

Ingredients:

  • 1 cup dry lentils
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt and pepper to taste
  • Cooked pasta of choice (like spaghetti)

Instructions:

  1. Cook lentils according to package instructions.
  2. Heat olive oil in a skillet, then sauté onion and garlic.
  3. Stir in crushed tomatoes, tomato paste, oregano, thyme, salt, and pepper.
  4. Add cooked lentils and simmer for 15 minutes. Serve over pasta.
