Ingredients:
- 1 head cauliflower, cut into florets
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Corn tortillas
- 1/2 cup shredded cabbage
- 1/4 cup salsa
- 1/4 cup vegan sour cream
Instructions:
- Toss cauliflower with olive oil, chili powder, cumin, paprika, salt, and pepper.
- Roast at 400°F for 20 minutes until golden.
- Serve in tortillas with cabbage, salsa, and a dollop of vegan sour cream.
