Mini Matcha Cheesecakes

Ingredients:

  • 1 cup almond flour
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 cup cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1 tbsp matcha powder
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. Mix almond flour, melted coconut oil, and maple syrup. Press the mixture into the bottom of each muffin cup.
  3. In a bowl, beat together cream cheese, Greek yogurt, honey, matcha powder, and vanilla extract until smooth.
  4. Spoon the matcha mixture over the almond crusts.
  5. Bake for 15-20 minutes, or until set. Cool completely before refrigerating for at least 2 hours.
  6. Serve chilled.
