Ingredients:
- 1 cup red lentils
- 1 onion (chopped)
- 2 carrots (sliced)
- 2 celery stalks (chopped)
- 1 tsp cumin
- 4 cups vegetable broth
Instructions:
- Sauté onion, carrots, and celery in olive oil until soft.
- Add lentils, cumin, and vegetable broth.
- Simmer for 25-30 minutes until lentils are tender.
- Season with salt and pepper to taste, and serve warm.
