Ingredients:
- 2 large zucchinis, sliced thinly
- 1 lb ground turkey
- 1 jar gluten-free marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella
- 1 egg
- 1 tsp oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F. Cook ground turkey in a skillet.
- Mix ricotta, egg, oregano, salt, and pepper in a bowl.
- Layer zucchini slices, meat, marinara, and ricotta mix in a baking dish.
- Top with mozzarella and bake for 30 minutes.
Is vegetable lasagna good for diet?
The prep takes awhile since the lasagna noodles need to be cooked before baking and there are lots of veggies to slice up but it’s well worth the effort!
