Chickpea Curry

Ingredients:

  • 1 can chickpeas (drained)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp curry powder
  • 1 cup coconut milk
  • 1 tomato (diced)

Instructions:

  1. Sauté onion and garlic in oil until soft.
  2. Add curry powder and stir for 1 minute.
  3. Add chickpeas, coconut milk, and diced tomato.
  4. Simmer for 10-15 minutes. Serve with rice or naan bread.
