Ingredients:
- 1 can chickpeas (drained)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 tsp curry powder
- 1 cup coconut milk
- 1 tomato (diced)
Instructions:
- Sauté onion and garlic in oil until soft.
- Add curry powder and stir for 1 minute.
- Add chickpeas, coconut milk, and diced tomato.
- Simmer for 10-15 minutes. Serve with rice or naan bread.
