Ingredients:
- 4 bell peppers, halved and seeded
- 1 cup cooked brown rice
- 1 can (15 oz) black beans, drained
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions:
- Mix rice, black beans, corn, tomatoes, cumin, and chili powder in a bowl.
- Stuff bell pepper halves with the mixture.
- Bake at 375°F for 25 minutes.
