Vegan Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers, halved and seeded
  • 1 cup cooked brown rice
  • 1 can (15 oz) black beans, drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions:

  1. Mix rice, black beans, corn, tomatoes, cumin, and chili powder in a bowl.
  2. Stuff bell pepper halves with the mixture.
  3. Bake at 375°F for 25 minutes.
