Vegan Chickpea Curry

Ingredients:

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained
  • 2 cups spinach
  • 2 tbsp curry powder
  • Salt to taste

Instructions:

  1. Heat coconut oil in a pot and sauté onion, garlic, and ginger until fragrant.
  2. Add curry powder and cook for 1 minute.
  3. Pour in coconut milk and diced tomatoes, then add chickpeas.
  4. Simmer for 10 minutes, then add spinach until wilted. Season with salt.
