Keto Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers, halved and seeded
  • 1 lb ground beef
  • 1 cup riced cauliflower
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced tomatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a skillet and cook ground beef until browned.
  2. Stir in riced cauliflower and tomatoes, then season with salt and pepper.
  3. Stuff bell peppers with the beef mixture and top with mozzarella.
  4. Bake at 375°F for 20 minutes.
