Ingredients:
- 1 cup dried lentils, rinsed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions:
- Heat olive oil in a pot over medium heat and sauté the onion, carrots, and celery for 5 minutes.
- Add garlic and cook for another minute.
- Stir in lentils, diced tomatoes, and spices.
- Pour in vegetable broth and bring to a boil.
- Lower the heat, cover, and simmer for 30-40 minutes until the lentils are tender.
- Season with salt and pepper before serving.
