Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups sliced mushrooms
- 1 cup vegetable broth
- 1 cup coconut milk
- 2 tbsp soy sauce (or tamari)
- 2 tbsp nutritional yeast
- Salt and pepper to taste
- Cooked pasta of choice
Instructions:
- Heat olive oil in a pan, then sauté onion and garlic.
- Add mushrooms and cook until softened.
- Stir in broth, coconut milk, soy sauce, and nutritional yeast. Simmer for 10 minutes.
- Serve over cooked pasta.
