Vegan Mushroom Stroganoff

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 cups sliced mushrooms
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • 2 tbsp soy sauce (or tamari)
  • 2 tbsp nutritional yeast
  • Salt and pepper to taste
  • Cooked pasta of choice

Instructions:

  1. Heat olive oil in a pan, then sauté onion and garlic.
  2. Add mushrooms and cook until softened.
  3. Stir in broth, coconut milk, soy sauce, and nutritional yeast. Simmer for 10 minutes.
  4. Serve over cooked pasta.
