Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 cup lentils, rinsed
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and garlic, and sauté until softened.
- Add lentils, diced tomatoes, vegetable broth, cumin, and paprika. Stir well.
- Bring to a boil, then reduce heat and let simmer for 25-30 minutes, or until lentils are tender.
- Season with salt and pepper. Serve hot, garnished with fresh parsley.
