- 1 lb ground chicken

- 1/4 cup chopped water chestnuts
- 1/4 cup tamari (gluten-free soy sauce)
- 1 tablespoon hoisin sauce (gluten-free)
- 1 tablespoon rice vinegar
- 1 head butter lettuce, leaves separated
- Chopped peanuts and cilantro, for garnish
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add garlic and cook for 1 minute until fragrant.
- Add ground chicken and cook, breaking it up with a spoon, until fully cooked.
- Stir in green onions, carrots, water chestnuts, tamari, hoisin sauce, and rice vinegar. Cook for 2-3 minutes.
- Spoon the chicken mixture into lettuce leaves and garnish with peanuts and cilantro.
- Serve immediately.
