Banana Oatmeal Pancakes

Ingredients:

  • 1 ripe banana
  • 1 cup rolled oats
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Honey or maple syrup (optional)

Instructions:

  1. Blend oats, banana, eggs, baking powder, and cinnamon until smooth.
  2. Heat a non-stick pan and pour small circles of batter.
  3. Cook until bubbles form on top, then flip and cook the other side.
  4. Serve with honey or maple syrup.

If you make your own pancakes/waffles, from scratch, and choose healthy ingredients, they can be very healthy; Whole grain flour, low cholesterol oil (or real butter, if you don’t have cholesterol issues) add raisins, fresh or frozen fruit, nuts and seeds. Put fresh fruit on top, instead of syrup.
